Bright, lemony, and impossibly crumbly bars with a crunchy oat topping and smooth lemon custard layer.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (melted)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup lemon juice (freshly squeezed)
  • 1 cup sugar
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. In a large bowl, combine flour, oats, brown sugar, melted butter, baking soda, and salt. Mix until crumbly.
  3. Press half of the crumb mixture into the bottom of the prepared baking dish.
  4. In another bowl, whisk together lemon juice, sugar, eggs, lemon zest, and cornstarch until smooth. Pour the lemon mixture over the crust.
  5. Sprinkle the remaining crumble topping over the lemon filling.
  6. Bake for 25-30 minutes or until the topping is golden brown.
  7. Allow to cool completely before slicing into bars and serving.

Notes

Use fresh-squeezed lemon juice and lemon zest for the brightest flavor. Let cool completely for neat slicing.
