- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup unsalted butter (melted)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup lemon juice (freshly squeezed)
- 1 cup sugar
- 3 large eggs
- 1 tablespoon lemon zest
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
- In a large bowl, combine flour, oats, brown sugar, melted butter, baking soda, and salt. Mix until crumbly.
- Press half of the crumb mixture into the bottom of the prepared baking dish.
- In another bowl, whisk together lemon juice, sugar, eggs, lemon zest, and cornstarch until smooth. Pour the lemon mixture over the crust.
- Sprinkle the remaining crumble topping over the lemon filling.
- Bake for 25-30 minutes or until the topping is golden brown.
- Allow to cool completely before slicing into bars and serving.
Notes
Use fresh-squeezed lemon juice and lemon zest for the brightest flavor. Let cool completely for neat slicing.
