A bright twist on classic baked oatmeal, this Mango Coconut Baked Oats delivers sweet mango, creamy coconut milk, and a lightly crisp top — all in one dish.

Ingredients

  • 1 cup rolled oats
  • 1 cup coconut milk
  • 1 ripe mango, diced
  • 1/4 cup shredded coconut
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the rolled oats, coconut milk, diced mango, shredded coconut, honey or maple syrup, baking powder, vanilla extract, and salt.
  3. Pour the mixture into a greased baking dish.
  4. Bake for 25–30 minutes or until the top is golden and the oats are set.
  5. Let it cool slightly before serving. Enjoy warm or cold!

Notes

For a crunchier top, sprinkle an extra tablespoon of shredded coconut or chopped nuts before baking. Use very ripe mango for maximum sweetness.
