A delightful side dish combining sweet maple syrup with tangy mustard, roasted to perfection.

Ingredients

  • 4 tbsp butter
  • 3 tbsp maple syrup
  • 2 tbsp grainy mustard
  • 1 tbsp Dijon mustard
  • 1 tsp lemon juice
  • ½ tsp kosher salt
  • ¼ tsp pepper
  • 2 lb carrots

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the carrots and cut them into evenly sized pieces, aiming for 2 to 3-inch lengths.
  3. In a small saucepan over low heat, melt the butter gently.
  4. Once melted, stir in the maple syrup, grainy mustard, Dijon mustard, lemon juice, kosher salt, and pepper until well combined.
  5. Place the cut carrots on a baking sheet lined with parchment paper and drizzle the maple mustard mixture over them, tossing to coat.
  6. Roast the carrots in the preheated oven for 25-30 minutes, tossing halfway through.
  7. Once tender and caramelized, serve warm and enjoy!

Notes

For a plant-based option, substitute vegan butter. You can also use honey or agave syrup instead of maple syrup.
