- 4 tbsp butter
- 3 tbsp maple syrup
- 2 tbsp grainy mustard
- 1 tbsp Dijon mustard
- 1 tsp lemon juice
- ½ tsp kosher salt
- ¼ tsp pepper
- 2 lb carrots
Instructions
- Preheat your oven to 400°F (200°C).
- Peel the carrots and cut them into evenly sized pieces, aiming for 2 to 3-inch lengths.
- In a small saucepan over low heat, melt the butter gently.
- Once melted, stir in the maple syrup, grainy mustard, Dijon mustard, lemon juice, kosher salt, and pepper until well combined.
- Place the cut carrots on a baking sheet lined with parchment paper and drizzle the maple mustard mixture over them, tossing to coat.
- Roast the carrots in the preheated oven for 25-30 minutes, tossing halfway through.
- Once tender and caramelized, serve warm and enjoy!
Notes
For a plant-based option, substitute vegan butter. You can also use honey or agave syrup instead of maple syrup.
