- 1 cup fresh cranberries
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a bowl, combine cranberries and sugar; set aside.
- In another bowl, cream the butter until light and fluffy.
- Beat in the eggs one at a time and stir in the vanilla.
- In a separate bowl, mix flour, baking powder, and salt. Gradually add to the butter mixture until just combined.
- Fold in the cranberries and nuts if using.
- Spread the batter evenly in the prepared pan.
- Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
- Allow to cool before cutting into bars.
Notes
Use fresh cranberries for the best results. Store in an airtight container for up to 2 days or refrigerate for up to 5 days.
