Ingredients

  • 1 cup fresh cranberries
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, combine cranberries and sugar; set aside.
  3. In another bowl, cream the butter until light and fluffy.
  4. Beat in the eggs one at a time and stir in the vanilla.
  5. In a separate bowl, mix flour, baking powder, and salt. Gradually add to the butter mixture until just combined.
  6. Fold in the cranberries and nuts if using.
  7. Spread the batter evenly in the prepared pan.
  8. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  9. Allow to cool before cutting into bars.

Notes

Use fresh cranberries for the best results. Store in an airtight container for up to 2 days or refrigerate for up to 5 days.
