A simple and elegant oven-baked Chilean sea bass recipe with a bright lemon garlic butter sauce, perfect for cozy dinners.

Ingredients

  • 1 pound Chilean sea bass fillets
  • 1.5 teaspoons kosher salt
  • 1 teaspoon oregano
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • Zest of 1 medium lemon
  • Juice of ½ medium lemon
  • 4 cloves garlic, minced
  • Lemon slices for topping
  • Fresh oregano and parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil.
  3. In a small bowl, mix melted butter, olive oil, garlic, lemon zest, lemon juice, oregano, Italian seasoning, salt, pepper, and red pepper flakes.
  4. Place sea bass fillets in the baking dish and brush with the butter mixture on all sides.
  5. Top each fillet with lemon slices.
  6. Bake uncovered for 12–15 minutes, or until fish flakes easily with a fork and turns opaque.
  7. Remove from oven and spoon pan sauce over fillets.
  8. Garnish with fresh parsley and oregano before serving.

Notes

Choose fillets that are similar in thickness for even cooking. For best results, pat fish dry before seasoning.
