Ingredients

  • 8 sheets of phyllo pastry
  • 200 g feta cheese, crumbled
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 teaspoon lemon zest
  • Freshly ground black pepper to taste
  • 3 tablespoons olive oil, divided
  • 1/4 cup honey
  • 1 tablespoon chili flakes
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium-sized bowl, combine the crumbled feta, dill, mint, lemon zest, and a generous pinch of black pepper. Mix well until the herbs and zest are evenly distributed throughout the cheese.
  3. On a clean, dry surface, lay out one sheet of phyllo pastry and lightly brush with olive oil. Carefully place another sheet on top, brushing it with oil as well.
  4. Cut the layered phyllo sheets into 4 equal strips lengthwise.
  5. Spoon approximately one tablespoon of the feta mixture onto the end of each strip.
  6. Fold the sides over the filling and roll up the pastry into a cylinder, ensuring that the filling is sealed inside.
  7. Place the rolls seam-side down on the prepared baking sheet.
  8. Lightly brush the tops with olive oil and repeat the process with the remaining phyllo sheets and filling.
  9. Bake the rolls in the preheated oven for 18-20 minutes or until golden brown and crispy.
  10. While the rolls are baking, prepare the chili honey by combining the honey, chili flakes, and lemon juice in a small saucepan. Warm the mixture over low heat until it’s slightly runny, stirring occasionally.
  11. Once the rolls are baked, remove them from the oven and let them cool slightly. Drizzle the warm chili honey over the rolls before serving or serve it on the side for dipping.

Notes

For best results, work with the phyllo quickly to prevent drying out. Store the rolls in an airtight container in the refrigerator for 1-2 days; reheat in the oven for best crispness.
