- 1/2 cup oats
- 1/2 cup Greek yogurt
- 1/2 cup chocolate chips
- Flaky sea salt (for topping)
- 1 tsp vanilla extract

Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the peanut butter, brown sugar, and Greek yogurt until smooth.
- Stir in the oats, chocolate chips, vanilla extract, and baking soda until well combined.
- Scoop tablespoons of the dough onto a baking sheet lined with parchment paper, spacing them out.
- Sprinkle a pinch of flaky sea salt on top of each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For the best texture, use a creamy peanut butter and consider chilling the dough in warm kitchens. Rotate baking sheets for even baking and avoid overbaking for soft centers.
