- 1/2 cup butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1/4 cup milk (or non-dairy alternative)
- 1 teaspoon vanilla extract
- 3 cups old-fashioned rolled oats
- 2 cups crispy rice cereal
- 1 1/2 cups chopped pecans
- 2 cups powdered sugar
- 3-4 tablespoons milk (or non-dairy alternative)
- 1/2 teaspoon vanilla extract
Instructions
- Line a large baking sheet with parchment paper and prepare a large bowl with oats, crispy rice cereal, and chopped pecans.
- In a medium saucepan, combine butter, granulated sugar, light brown sugar, and 1/4 cup milk. Bring to a full boil for 1 minute while stirring constantly.
- Remove from heat, stir in 1 teaspoon of vanilla extract, and pour the mixture over the bowl of dry ingredients. Stir until evenly coated.
- Drop rounded spoonfuls of the mixture onto the prepared baking sheet and shape into mounds if desired.
- Chill in the refrigerator for at least 30 minutes until firm.
- Prepare the glaze by whisking powdered sugar, 3 tablespoons of milk, and 1/2 teaspoon vanilla extract until smooth. Adjust thickness with more milk if needed.
- Drizzle or spoon the glaze over the chilled bites and let set before serving.
Notes
Toast pecans before chopping to enhance flavor. Store in an airtight container for up to five days.
