Ingredients

- 2 pounds beef chuck, cut into cubes
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 bell peppers (any color), chopped
- 4 cups beef broth
- 2 carrots, sliced
- 2 potatoes, diced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Crusty bread for serving
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the beef cubes and brown on all sides.
- Remove the beef and set aside.
- In the same pot, add the onions and garlic, cooking until softened.
- Add the carrots and bell peppers, cooking for another 5 minutes.
- Return the beef to the pot and add the beef broth, potatoes, thyme, paprika, salt, and pepper.
- Bring to a boil, then reduce heat to low and simmer for 90 minutes or until the beef is tender.
- Serve hot with crusty bread.
Notes
Marinate beef overnight for enhanced flavor. For quicker preparation, use a pressure cooker.
