- 1 cup butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup peppermint chocolate chips
- 1/2 teaspoon peppermint extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract and peppermint extract.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually mix this dry mixture into the wet ingredients until just combined.
- Gently fold in the peppermint chocolate chips.
- Drop rounded tablespoons of cookie dough onto ungreased cookie sheets, spacing them a few inches apart.
- Bake in the preheated oven for 8-10 minutes or until the edges are set.
- Allow to cool on the cookie sheets for a few minutes before transferring to wire racks to cool completely.
Notes
For thicker cookies, chill the dough for about 30 minutes before baking. Store in an airtight container to keep them fresh for up to a week.
