Ingredients

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1/4 cup diced pimentos
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 package of puff pastry sheets

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine cream cheese, cheddar cheese, mayonnaise, diced pimentos, garlic powder, onion powder, salt, and pepper. Mix until smooth.
  3. Roll out the puff pastry sheets and cut them into small squares.
  4. Place a spoonful of the pimento cheese mixture in the center of each pastry square.
  5. Fold the corners of the pastry over the filling and seal.
  6. Place on a baking sheet lined with parchment paper.
  7. Bake for 15-20 minutes or until golden brown.
  8. Allow to cool slightly before serving.

Notes

Work quickly with the puff pastry while it is cold for best results. For uniform bites, use a ruler and a cookie scoop.
