A quick skillet meal combining tender chicken, juicy pineapple, and crisp bell pepper with fluffy rice.

Ingredients

  • 1 pound chicken breast, diced
  • 1 cup pineapple chunks
  • 2 cups cooked rice
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • Salt and pepper to taste
  • Optional: green onions for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until no longer pink.
  2. Add onion and bell pepper; sauté until softened.
  3. Stir in pineapple chunks and cooked rice.
  4. Add soy sauce, salt, and pepper; mix well.
  5. Cook for another 3-5 minutes until everything is heated through.
  6. Serve hot, garnished with green onions if desired.

Notes

Use cooled rice to prevent clumping. For extra flavor, squeeze lime if the pineapple is very sweet.
