- 1 pound chicken breast, diced
- 1 cup pineapple chunks
- 2 cups cooked rice
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 bell pepper, diced
- 1 onion, diced
- Salt and pepper to taste
- Optional: green onions for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until no longer pink.
- Add onion and bell pepper; sauté until softened.
- Stir in pineapple chunks and cooked rice.
- Add soy sauce, salt, and pepper; mix well.
- Cook for another 3-5 minutes until everything is heated through.
- Serve hot, garnished with green onions if desired.
Notes
Use cooled rice to prevent clumping. For extra flavor, squeeze lime if the pineapple is very sweet.
