  • 1/2 cup finely chopped pistachios
  • 2 cups sifted all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup dried cranberries, chopped
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 egg
  • A splash of almond extract (optional)
  • Holiday sprinkles for decorating (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and powdered sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk the sifted flour and salt together with the finely chopped pistachios.
  5. Gradually add the dry ingredients to the butter mixture, stirring until just combined.
  6. Gently fold in the chopped dried cranberries.
  7. On a floured surface, roll the dough into small wreath shapes.
  8. Place the wreaths on a baking sheet lined with parchment paper and bake for 12-15 minutes until the edges are golden brown.
  9. Allow cookies to cool completely on a wire rack before decorating.

Notes

For a healthier option, reduce butter by half and replace it with applesauce. You can also freeze the dough for up to 3 months.
