- 8 oz (225g) brie cheese, cut into bite-sized cubes
- 1 sheet puff pastry, thawed and cut into small squares
- 1/4 cup shelled pistachios, finely chopped
- 1/4 cup cranberry sauce
- 2 tablespoons honey
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- On a lightly floured surface, roll out puff pastry and cut it into small squares, about 2-3 inches each.
- Place a cube of brie in the center of each pastry square.
- Generously sprinkle the chopped pistachios on top of the brie.
- Fold the corners of the pastry over the cheese to create a pocket, ensuring it’s tightly sealed.
- Brush the tops of each pocket with the beaten egg for a golden color when baked.
- Bake in the preheated oven for 15-20 minutes or until the pastry is golden and puffed.
- While the bites are baking, mix the cranberry sauce and honey in a small bowl to create your glaze.
- Remove from the oven and serve warm, drizzled with the cranberry honey glaze.
