This whipped feta brings together sweet pomegranate arils, crunchy pistachios, and tangy cheese for a delicious appetizer perfect for any gathering.

Ingredients

  • 8 oz (225g) block of feta cheese, crumbled
  • 4 oz (110g) cream cheese, softened
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 1/4 cup pomegranate arils
  • 1/4 cup shelled unsalted pistachios, roughly chopped
  • 2 tablespoons fresh mint leaves, finely chopped
  • Salt and freshly ground black pepper, to taste
  • Optional: Extra olive oil for drizzle, and pita bread or crackers for serving

Instructions

  1. In a food processor, combine crumbled feta, softened cream cheese, olive oil, lemon juice, and honey.
  2. Process the mixture until smooth and creamy, pausing to scrape down the sides as necessary.
  3. Taste the mixture, and if needed, season with a pinch of salt and freshly ground black pepper.
  4. Transfer the whipped feta to a serving dish, smoothing the top with the back of a spoon.
  5. Sprinkle the whipped feta with pomegranate arils, chopped pistachios, and fresh mint leaves.
  6. If desired, drizzle a bit of extra olive oil over the top for added richness.
  7. Serve immediately with pita bread or crackers on the side for scooping.

Notes

For the best results, use full-fat cream cheese and consider toasting the pistachios before chopping.
