- 8 oz (225g) block of feta cheese, crumbled
- 4 oz (110g) cream cheese, softened
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey
- 1/4 cup pomegranate arils
- 1/4 cup shelled unsalted pistachios, roughly chopped
- 2 tablespoons fresh mint leaves, finely chopped
- Salt and freshly ground black pepper, to taste
- Optional: Extra olive oil for drizzle, and pita bread or crackers for serving
Instructions
- In a food processor, combine crumbled feta, softened cream cheese, olive oil, lemon juice, and honey.
- Process the mixture until smooth and creamy, pausing to scrape down the sides as necessary.
- Taste the mixture, and if needed, season with a pinch of salt and freshly ground black pepper.
- Transfer the whipped feta to a serving dish, smoothing the top with the back of a spoon.
- Sprinkle the whipped feta with pomegranate arils, chopped pistachios, and fresh mint leaves.
- If desired, drizzle a bit of extra olive oil over the top for added richness.
- Serve immediately with pita bread or crackers on the side for scooping.
Notes
For the best results, use full-fat cream cheese and consider toasting the pistachios before chopping.
