- 1 cup rice
- 2 tablespoons butter
- 2 large onions, thinly sliced
- 2 cups vegetable or chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large skillet, melt the butter over medium heat. Add the sliced onions and cook until they are caramelized and golden brown, about 15-20 minutes.
- In a separate pot, bring the vegetable or chicken broth to a boil.
- Add the rice to the skillet with the caramelized onions and stir to combine.
- Pour the boiling broth over the rice and onions. Season with salt and pepper.
- Reduce the heat to low, cover, and let it simmer until the rice is fully cooked and has absorbed all the liquid, about 15-20 minutes.
- Fluff the rice with a fork, garnish with fresh parsley if desired, and serve hot.
Notes
For a glossy finish and extra richness, stir in a small knob of butter just before serving. Store leftovers in an airtight container in the refrigerator for up to four days.
