Ingredients

  • 1 cup rice
  • 2 tablespoons butter
  • 2 large onions, thinly sliced
  • 2 cups vegetable or chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the sliced onions and cook until they are caramelized and golden brown, about 15-20 minutes.
  2. In a separate pot, bring the vegetable or chicken broth to a boil.
  3. Add the rice to the skillet with the caramelized onions and stir to combine.
  4. Pour the boiling broth over the rice and onions. Season with salt and pepper.
  5. Reduce the heat to low, cover, and let it simmer until the rice is fully cooked and has absorbed all the liquid, about 15-20 minutes.
  6. Fluff the rice with a fork, garnish with fresh parsley if desired, and serve hot.

Notes

For a glossy finish and extra richness, stir in a small knob of butter just before serving. Store leftovers in an airtight container in the refrigerator for up to four days.
