A delightful dessert featuring a creamy pumpkin mousse layered with whipped cream and crunchy cookie crumbles, perfect for fall gatherings or a simple indulgence at home.

Ingredients

  • 1 cup pumpkin puree (canned or fresh cooked)
  • 1 cup heavy whipping cream, divided
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup crushed gingersnap or graham cracker cookies (plus some whole cookies for garnish)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. In a bowl, whip 1/2 cup of heavy cream with 1/3 cup granulated sugar and vanilla extract until soft peaks form.
  2. In a separate bowl, beat the softened cream cheese with powdered sugar until smooth. Add the pumpkin puree and pumpkin pie spice, stirring until well mixed.
  3. Gently fold the whipped cream into the pumpkin mixture until fully incorporated.
  4. In another bowl, whip the remaining 1/2 cup of heavy cream until stiff peaks form.
  5. In each glass, add a layer of crushed cookies, followed by a layer of pumpkin mousse, and then a layer of whipped cream. Repeat the layers as desired.
  6. Top each parfait with extra whipped cream, more crushed cookies, and a whole cookie for garnish. Add a mint leaf if you like. Cover and chill in the refrigerator for at least 1 hour before serving.

Notes

Make sure to chill the parfaits for at least 1 hour to enhance flavors and perfect the mousse consistency.
