- 1 cup pumpkin puree (canned or fresh cooked)
- 1 cup heavy whipping cream, divided
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 cup crushed gingersnap or graham cracker cookies (plus some whole cookies for garnish)
- Fresh mint leaves for garnish (optional)
Instructions
- In a bowl, whip 1/2 cup of heavy cream with 1/3 cup granulated sugar and vanilla extract until soft peaks form.
- In a separate bowl, beat the softened cream cheese with powdered sugar until smooth. Add the pumpkin puree and pumpkin pie spice, stirring until well mixed.
- Gently fold the whipped cream into the pumpkin mixture until fully incorporated.
- In another bowl, whip the remaining 1/2 cup of heavy cream until stiff peaks form.
- In each glass, add a layer of crushed cookies, followed by a layer of pumpkin mousse, and then a layer of whipped cream. Repeat the layers as desired.
- Top each parfait with extra whipped cream, more crushed cookies, and a whole cookie for garnish. Add a mint leaf if you like. Cover and chill in the refrigerator for at least 1 hour before serving.
Notes
Make sure to chill the parfaits for at least 1 hour to enhance flavors and perfect the mousse consistency.
