- 2 lbs chicken breasts, sliced
- 1 bell pepper, sliced (red, green, or yellow)
- 1 onion, sliced
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Tortillas (for serving)
- Optional toppings: avocado, salsa, cheese, sour cream
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine chicken, sliced bell peppers, onion, olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Toss until everything is evenly coated.
- Spread the mixture in a single layer on a sheet pan.
- Roast in the oven for 25-30 minutes, or until the chicken is cooked through and the veggies are tender.
- Serve warm with tortillas and your choice of toppings.
Notes
Cut chicken and vegetables to similar thickness for even cooking. Adjust chili powder to your heat preference.
