Ingredients

  • 2 lbs chicken breasts, sliced
  • 1 bell pepper, sliced (red, green, or yellow)
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Tortillas (for serving)
  • Optional toppings: avocado, salsa, cheese, sour cream

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine chicken, sliced bell peppers, onion, olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Toss until everything is evenly coated.
  3. Spread the mixture in a single layer on a sheet pan.
  4. Roast in the oven for 25-30 minutes, or until the chicken is cooked through and the veggies are tender.
  5. Serve warm with tortillas and your choice of toppings.
