A comforting slow cooker dish combining tender chicken and roasted potatoes in a garlicky, cheesy sauce, perfect for busy weeknights.

Ingredients

  • 1 lb chicken breasts
  • 5 medium potatoes, chopped
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • ½ to ¾ cup Buffalo Wild Wings Garlic Parmesan Sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large bowl, toss chopped potatoes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated. Spread them evenly in the bottom of your slow cooker.
  2. Season chicken breasts with salt, pepper, onion powder, paprika, Italian seasoning, and minced garlic. Place the chicken on top of the potatoes.
  3. Pour the garlic parmesan sauce evenly over the chicken and potatoes, making sure the chicken is fully coated.
  4. Cover and cook on low for 4–6 hours or high for 2–3 hours, until chicken is cooked through and potatoes are tender.
  5. About 10 minutes before serving, sprinkle mozzarella cheese over the top. Cover again until melted and bubbly.
  6. Garnish with fresh parsley if desired and serve hot with a side of bread or salad.

Notes

For crispy potatoes, broil them for a few minutes after slow cooking. Store leftovers in an airtight container for up to three days.
