Ingredients

  • 1 whole chicken (3-4 pounds)
  • 1 box of stuffing mix
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. In a large bowl, combine the stuffing mix, chicken broth, chopped onion, chopped celery, garlic powder, thyme, salt, and pepper. Mix until well combined.
  2. Place the whole chicken in the slow cooker and drizzle with olive oil (if using).
  3. Pour the stuffing mixture over and around the chicken in the slow cooker.
  4. Cover and cook on low for 6-8 hours or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  5. Remove the chicken from the slow cooker, let it rest for a few minutes, then carve and serve with the stuffing.

Notes

Try adding fresh herbs for enhanced flavor and consider using different stuffing mixes for variety.
