Bright and flavor-packed tuna rice bowls with creamy tuna, cauliflower rice, avocado, and cucumber.

Ingredients

  • 1 can of tuna
  • 1 tablespoon mayonnaise
  • 1 teaspoon sriracha sauce
  • 1 cup cauliflower rice
  • 1/2 avocado, sliced
  • 1/4 cucumber, diced
  • Sesame seeds for garnish
  • Green onions for garnish
  • Soy sauce or tamari (optional)

Instructions

  1. In a bowl, mix the canned tuna with mayonnaise and sriracha sauce. Adjust the spiciness to your liking.
  2. Prepare the cauliflower rice by either using store-bought or grating cauliflower into rice-sized pieces and sautéing until tender.
  3. In a meal prep container or bowl, place a portion of the cauliflower rice.
  4. Top with the spicy tuna mixture, avocado slices, and cucumber.
  5. Garnish with sesame seeds and green onions.
  6. Drizzle with soy sauce or tamari if desired.
  7. Store in the refrigerator until ready to eat.

Notes

Use quality canned tuna, and adjust mayo and sriracha to your taste. Store avocado slices separately to prevent browning.
