- 1 can of tuna
- 1 tablespoon mayonnaise
- 1 teaspoon sriracha sauce
- 1 cup cauliflower rice
- 1/2 avocado, sliced
- 1/4 cucumber, diced
- Sesame seeds for garnish
- Green onions for garnish
- Soy sauce or tamari (optional)
Instructions
- In a bowl, mix the canned tuna with mayonnaise and sriracha sauce. Adjust the spiciness to your liking.
- Prepare the cauliflower rice by either using store-bought or grating cauliflower into rice-sized pieces and sautéing until tender.
- In a meal prep container or bowl, place a portion of the cauliflower rice.
- Top with the spicy tuna mixture, avocado slices, and cucumber.
- Garnish with sesame seeds and green onions.
- Drizzle with soy sauce or tamari if desired.
- Store in the refrigerator until ready to eat.
Notes
Use quality canned tuna, and adjust mayo and sriracha to your taste. Store avocado slices separately to prevent browning.
