- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and diced
- 4 to 6 tablespoons ice water
- 2 medium sweet potatoes, peeled and cubed
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon vanilla extract
- Oil for frying
- 1 cup powdered sugar
- 2 tablespoons milk
Instructions
- In a bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 240 minutes or overnight.
- Boil sweet potatoes until tender, then mash in a bowl. Stir in brown sugar, cinnamon, nutmeg, and vanilla until smooth.
- Roll out dough to 1/8 inch thick. Cut into circles, fill with sweet potato mixture, and fold over. Seal edges with a fork.
- Heat oil in a deep skillet. Fry pies until golden brown on both sides.
- Mix powdered sugar and milk to create icing, then drizzle over pies. Serve warm or at room temperature.
Notes
Keep the butter and water cold for a flaky crust. Don’t overfill the pies to ensure a neat seal.
