A comforting meatloaf casserole topped with creamy, cheesy mashed potatoes, perfect for family dinners.

  • Total Time: 60 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • 1 ½ pounds ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup breadcrumbs
  • ¼ cup whole milk
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup ketchup
  • 2 pounds potatoes, peeled and sliced
  • ½ cup sour cream
  • ¼ cup whole milk
  • 2 tablespoons unsalted butter
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped green onions
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper. Mix until well blended.
  3. Press the mixture evenly into the bottom of a greased 9×13-inch baking dish.
  4. Spread ketchup evenly over the top of the meatloaf layer.
  5. Bake for 25 minutes.
  6. Meanwhile, boil the potatoes in salted water for 15 minutes or until tender. Drain well.
  7. Mash potatoes with sour cream, milk, and butter until smooth. Season with salt and pepper to taste.
  8. Spread the mashed potatoes evenly over the baked meatloaf layer.
  9. Sprinkle cheddar cheese and chopped green onions on top.
  10. Return casserole to oven and bake for another 20 minutes, until cheese is melted and bubbly.
  11. Remove from oven and let rest for 10 minutes before serving.

Notes

Let the meat mixture be well combined but do not overwork it to keep the texture tender. Drain any excess water from the potatoes thoroughly before mashing so the topping stays fluffy rather than watery.
