Instructions
- In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, salt, and pepper.
- Mix well to create the tzatziki dressing.
- In another bowl, add the shredded chicken and mix it with the tzatziki dressing until well combined.
- Serve the chicken salad over a bed of mixed greens or lettuce.
Notes
Squeeze excess moisture from the cucumber to avoid a watery dressing. Adjust salt and lemon to taste. This salad stores well in an airtight container for up to three days.
