- 4 boneless, skinless chicken breasts

- 8 oz Brie cheese, cut into small pieces
- 1 cup baby spinach leaves
- 2 tablespoons olive oil

- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Toothpicks or kitchen twine
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the chicken: Place the chicken breasts on a cutting board. Use a sharp knife to cut a pocket into each chicken breast, ensuring not to cut all the way through.
- Prepare the filling: In a bowl, combine the diced apples, Brie cheese, and baby spinach. Add salt, pepper, garlic powder, onion powder, and thyme. Mix until well combined.
- Stuff the chicken: Carefully fill each chicken breast pocket with the apple and Brie mixture.
- Secure the filling: Use toothpicks or kitchen twine to secure the open edges of the chicken.
- Season the chicken: Brush the outside of the chicken breasts with olive oil. Season with additional salt, pepper, and thyme.
- Cook the chicken: Place the stuffed chicken breasts in a shallow baking dish. Bake for 30 to 35 minutes or until cooked through.
- Rest before serving: Let the chicken rest for about 5 minutes, then remove toothpicks or twine and slice to serve.
Notes
Choose sweet and tart apples for balance. Pat the chicken dry before cutting pockets for better browning. Refrigerate assembled breasts up to one day before baking.
