- 1 cup uncooked long-grain white rice
- 1 lb ground beef
- 1 small onion, diced
- 4 garlic cloves, minced
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup Parmesan cheese, grated
- 3 cups low sodium beef broth
- Salt and pepper to taste
- 1 tsp Italian seasoning
- 3 tbsp butter
- Fresh parsley, chopped (optional)
Instructions
- Melt 1 tablespoon of butter in a big skillet over medium heat. Add chopped onion and sauté for 3 to 4 minutes until softened.
- Add ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Stir in uncooked rice, beef broth, Italian seasoning, salt, and pepper. Mix well.
- Increase heat to boil, then reduce to low, cover, and simmer for 18 to 20 minutes until rice absorbs broth and softens.
- In a small saucepan, melt the remaining 2 tablespoons of butter over low heat. Stir in Parmesan, cheddar, and milk until creamy and smooth.
- Pour cheese sauce into the skillet with the beef and rice mixture, stirring to combine.
- Cook uncovered for a couple more minutes to meld flavors. Serve warm, garnished with parsley if desired.
Notes
For best results, brown the beef thoroughly and adjust salt after adding cheese. Consider adding quick-cooking vegetables for added nutrition.
