A cozy one-skillet comfort meal featuring ground beef, garlic, butter, rice, and cheese.

Ingredients

  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup Parmesan cheese, grated
  • 3 cups low sodium beef broth
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 3 tbsp butter
  • Fresh parsley, chopped (optional)

Instructions

  1. Melt 1 tablespoon of butter in a big skillet over medium heat. Add chopped onion and sauté for 3 to 4 minutes until softened.
  2. Add ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  3. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  4. Stir in uncooked rice, beef broth, Italian seasoning, salt, and pepper. Mix well.
  5. Increase heat to boil, then reduce to low, cover, and simmer for 18 to 20 minutes until rice absorbs broth and softens.
  6. In a small saucepan, melt the remaining 2 tablespoons of butter over low heat. Stir in Parmesan, cheddar, and milk until creamy and smooth.
  7. Pour cheese sauce into the skillet with the beef and rice mixture, stirring to combine.
  8. Cook uncovered for a couple more minutes to meld flavors. Serve warm, garnished with parsley if desired.

Notes

For best results, brown the beef thoroughly and adjust salt after adding cheese. Consider adding quick-cooking vegetables for added nutrition.
