These Buffalo chicken bowls are a fast weeknight winner that balances fiery sauce with cool ranch and crisp lettuce, all built on a bed of fluffy rice.

Ingredients

  • 2 cups cooked rice
  • 2 cups shredded lettuce
  • 1 lb chicken breast, cooked and shredded
  • 1/2 cup Frank’s RedHot sauce
  • 1/4 cup butter
  • 1/4 cup ranch dressing
  • Salt and pepper to taste
  • Optional toppings: green onions, celery sticks, cheese

Instructions

  1. In a skillet, melt the butter over medium heat, then add the Frank’s RedHot sauce. Stir to combine.
  2. Add the shredded chicken to the skillet and mix well until the chicken is fully coated and heated through.
  3. In bowls, create a layer of rice, followed by a layer of lettuce.
  4. Spoon the buffalo chicken mixture on top of the lettuce.
  5. Drizzle with ranch dressing and add any optional toppings as desired.
  6. Serve immediately.

Notes
