Ingredients

  • Chicken thighs
  • Soy sauce
  • Brown sugar
  • Garlic, minced
  • Ginger, minced
  • Chicken broth
  • Onion, sliced
  • Scallions, for garnish
  • Rice, for serving
  • Salt and pepper to taste

Instructions

  1. In a pan, heat oil over medium heat. Sauté garlic and ginger until fragrant.
  2. Add chicken thighs and sear until browned.
  3. Pour in soy sauce and brown sugar, mix well.
  4. Add chicken broth and sliced onion. Simmer for 25 minutes until chicken is cooked through.
  5. Season with salt and pepper to taste.
  6. Serve over cooked rice, garnished with scallions.

Notes

Use bone-in thighs for extra juiciness. Avoid overcrowding the pan when searing chicken. Refrigerate leftovers for up to three days or freeze for up to two months.
