1 3/4 cups all-purpose flour, spooned and leveled

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon fine sea salt

1 teaspoon ground cinnamon, for the batter

1 teaspoon pumpkin pie spice

1 cup pumpkin puree, not pumpkin pie filling

1/2 cup neutral oil, such as avocado or canola

2 large eggs, at room temperature

3/4 cup granulated sugar

1/2 cup packed light brown sugar

1/4 cup whole milk

1 teaspoon pure vanilla extract

For the cinnamon swirl: 1/3 cup granulated sugar mixed with 2 teaspoons ground cinnamon

Instructions

Heat the oven to 350°F and set a rack in the center position. Grease a 9 by 5 inch loaf pan, then line it with a parchment sling.

In a medium bowl, whisk together the flour, baking soda, baking powder, salt, 1 teaspoon of cinnamon, and the pumpkin pie spice until evenly combined.

In a large bowl, whisk the pumpkin puree, oil, eggs, granulated sugar, and brown sugar for a full minute until smooth and glossy.

Whisk the milk and vanilla into the pumpkin mixture until fully incorporated.

Add the dry ingredients to the wet mixture in two additions, folding gently. Stop as soon as the last flour streak disappears. Let the batter rest for 5 minutes.

Stir the 1/3 cup of granulated sugar with the 2 teaspoons of cinnamon in a small bowl.

Spread half the batter into the prepared pan. Sprinkle two thirds of the cinnamon sugar evenly over the surface. Dollop the remaining batter over the top and spread gently.

Drag a butter knife through the batter in 3 or 4 slow figure-eight loops. Sprinkle the remaining cinnamon sugar over the top.

Bake for 55 to 65 minutes, until a wooden skewer inserted in the center comes out with a few moist crumbs but no wet batter.

Cool the loaf in the pan on a wire rack for 15 minutes, then lift it out and cool completely, about 1 hour, before slicing.

Notes

Layer with intention: batter, sugar, batter, then just 3 or 4 knife loops for a distinct ribbon (don’t over-swirl). Use pure pumpkin puree, not pumpkin pie filling. Measure flour by spooning and leveling; pull the loaf when the skewer shows moist crumbs (carryover heat finishes it).
