This classic homemade pecan pie has a flaky butter crust, a gooey caramel filling, and toasted pecans in every bite. It is the perfect make-ahead dessert for Thanksgiving, Christmas, or any fall gathering, with simple ingredients and bakery-worthy results.

1 unbaked 9 inch pie crust, homemade or store bought

1 cup pecans, coarsely chopped

1 1/2 cups pecan halves, for the top

3 large eggs, at room temperature

1 cup packed light brown sugar

1 cup light corn syrup

4 tablespoons unsalted butter, melted and slightly cooled

2 teaspoons pure vanilla extract

1/2 teaspoon fine sea salt

Whipped cream or vanilla ice cream, for serving (optional)

Instructions

1. Heat the oven to 350 F (175 C) with a rack in the lower third. Place a rimmed baking sheet on the rack while the oven heats.

2. Roll the dough into a 12 inch round on a floured surface and fit it into a 9 inch pie plate without stretching. Trim to one inch and crimp the edge.

3. Scatter the chopped pecans evenly over the bottom of the crust; reserve the pecan halves for the top.

4. Whisk the eggs until blended and frothy, then whisk in the brown sugar until smooth, thick, and glossy, about one full minute.

5. Whisk in the corn syrup, melted butter, vanilla, and salt until uniform and amber. Avoid vigorous beating.

6. Pour the filling slowly over the chopped pecans, keeping the nuts evenly distributed. Fill to just below the crimped edge.

7. Arrange the pecan halves in concentric circles from the outer edge toward the center, slightly overlapping.

8. Bake 55 to 65 minutes, until the edges are set and puffed and only the center trembles slightly when nudged.

9. If the crust edges brown too quickly, tent them loosely with foil after about 30 minutes.

10. Cool completely on a wire rack for at least 2 hours before slicing so the custard sets.

11. Slice with a sharp knife, wiping the blade between cuts. Serve with whipped cream or vanilla ice cream.

12. Refrigerate leftovers up to 4 days; refresh cold slices 10 minutes in a 300 F oven.

Notes

Do not overbake: a slight jiggle in the center at 60 minutes is exactly right; residual heat finishes the job as the pie cools. Toast the pecans 8 minutes at 350 F before assembling for deeper flavor. Use room temperature eggs for a smoother batter, and make sure the melted butter is warm, not hot. The pie can be baked a full day ahead; the flavor deepens by day two. To freeze, wrap tightly and freeze up to 3 months.
