Ingredients
Scale
- 12 oz (340 g) fresh cranberries, rinsed and picked over
- 3/4 cup (150 g) granulated sugar
- Pinch of fine salt
- 1 can (20 oz) crushed pineapple, drained for 20 minutes
- 1 cup (240 ml) heavy cream, very cold
- 2 tablespoons powdered sugar
- 1 teaspoon pure vanilla extract
- 2 cups (100 g) mini marshmallows
- 1/2 cup (55 g) chopped pecans, toasted (optional)
- Whole cranberries and a few mint leaves, to garnish (optional)
Instructions
- Pulse the cranberries in a food processor in 8 to 10 short bursts, scraping the bowl once, until they are finely chopped with visible pieces. Do not let the machine run into a puree.
- Tip the berries into a large bowl. Stir in the granulated sugar and the pinch of salt. Cover and refrigerate at least 2 hours, ideally overnight, until the berries sit in a deep red syrup and taste bright rather than harsh.
- Set the crushed pineapple in a fine sieve over a bowl and drain for a full 20 minutes, pressing once, gently, with the back of a spoon.
- Stir the drained pineapple into the cranberry mixture until evenly combined.
- In a chilled bowl, whip the cold heavy cream to soft peaks. Add the powdered sugar and vanilla, then whip to firm peaks that stand up when the whisk is lifted.
- Fold the whipped cream into the cranberry mixture with wide, slow strokes, turning the bowl as you go, until no white streaks remain.
- Fold in the mini marshmallows and the toasted pecans, if using, with just enough strokes to distribute them.
- Cover and refrigerate at least 2 hours, and up to 2 days. Stir once, gently, before serving cold in a glass bowl, crowned with a few whole cranberries.
