Crisp twice-baked cranberry pistachio biscotti with orange zest, ruby cranberries and green pistachios. 15-minute prep, perfect for Christmas cookie boxes.

  • Total Time: 1 hour 10 minutes
  • Yield: 24 biscotti 1x

Ingredients

Scale
  • 2 cups (250 g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon fine salt
  • 3/4 cup (150 g) granulated sugar
  • 1/2 cup (113 g) unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon finely grated orange zest (from 1 large orange)
  • 1 cup (120 g) shelled pistachios, coarsely chopped
  • 3/4 cup (90 g) dried cranberries

Instructions

  1. Heat the oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt until evenly combined.
  3. In a large bowl, whisk the melted butter and sugar for about 30 seconds until smooth. Whisk in the eggs one at a time, then the vanilla extract and orange zest.
  4. Pour the dry ingredients into the wet mixture and stir just until no flour streaks remain. The dough will be soft and slightly sticky.
  5. Fold in the chopped pistachios and dried cranberries until evenly distributed.
  6. Divide the dough in half. With lightly floured hands, shape each half into a log about 12 inches long and 3 inches wide on the prepared baking sheet. Flatten the tops slightly, leaving 3 inches between logs.
  7. Bake 30 to 35 minutes, until the logs feel firm when lightly pressed and show light golden color at the edges.
  8. Cool the logs on the baking sheet for exactly 15 minutes. Reduce the oven temperature to 300°F (150°C).
  9. Move the logs to a cutting board. Using a serrated knife and a gentle sawing motion, cut each log diagonally into 1/2-inch thick slices.
  10. Arrange the slices cut-side down on the baking sheet. Bake 10 minutes, flip each slice, and bake 10 minutes more, until dry, crisp, and lightly golden. Cool completely on a wire rack.
