A comforting and quick weeknight dish featuring whole wheat pasta, tender chicken, and a creamy garlic Parmesan sauce.

Ingredients

  • 2 cups whole wheat pasta
  • 1 lb lean chicken breast, diced
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the whole wheat pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken breast and cook until browned and cooked through.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Lower the heat and stir in the Greek yogurt and Parmesan cheese until well combined.
  5. Add the cooked pasta to the skillet, toss until everything is coated, and season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley if desired.

Notes

Pat chicken dry before dicing for better browning. Use gentle heat when adding yogurt to prevent separation.
