A garlicky, parmesan-studded chicken meatloaf that is tender, flavorful, and perfect for weeknight dinners.

Ingredients

  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp soy sauce (low-sodium recommended)
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Sauté diced onions in a skillet over medium heat until soft, about 5 minutes.
  3. In a large bowl, mix together ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese until combined.
  4. Shape the mixture into a loaf form in the greased baking dish.
  5. Sprinkle remaining Parmesan cheese on top. Optionally add paprika or Italian seasoning for extra flavor.
  6. Bake for 45 to 50 minutes or until the internal temperature reaches 165°F (74°C).
  7. Let rest for 10 minutes before slicing.

Notes

Let the meatloaf rest after baking so the juices redistribute. For extra browning, brush a tiny amount of olive oil on top during the last 10 minutes of cooking.
