A classic, shiny candy with perfect snap and toasty peanut flavor, made from a handful of pantry staples.

Ingredients

  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 2 cups peanuts (raw or roasted)
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. In a heavy saucepan, combine sugar, corn syrup, and water. Cook over medium heat until the mixture boils.
  2. Stir in the peanuts and continue to cook, stirring constantly, until the mixture reaches the hard crack stage (300°F or 150°C).
  3. Remove from heat and quickly stir in butter, vanilla, baking soda, and salt.
  4. Pour the mixture onto a greased baking sheet and spread evenly.
  5. Let cool completely before breaking into pieces.

Notes

Store peanut brittle in an airtight container at room temperature. Layer pieces between sheets of wax paper to prevent sticking when packing for gifts.
