Ingredients
1/4 cup maple syrup
2 tablespoons Dijon mustard
2 tablespoons olive oil, divided
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon dried thyme
1 1/2 teaspoons kosher salt, divided
3/4 teaspoon black pepper, divided
8 bone-in, skin-on chicken thighs (about 2 1/2 pounds)
1 small butternut squash, peeled and cut into 1-inch cubes (about 4 cups)
1 pound Brussels sprouts, trimmed and halved
1 large red onion, cut into wedges
1/2 cup dried cranberries
1/2 cup pecans, toasted and roughly chopped
Flaky sea salt, for finishing
Fresh thyme sprigs, for garnish
Lemon wedges, for serving
Instructions
Whisk the maple syrup, Dijon mustard, 1 tablespoon of the olive oil, smoked paprika, garlic powder, thyme, 1 teaspoon of the kosher salt, and 1/2 teaspoon of the black pepper in a small bowl until smooth and glossy.
Heat the oven to 425°F and position a rack in the center. Line a large rimmed sheet pan, about 18 by 13 inches, with parchment paper.
Pat the chicken thighs very dry with paper towels. Rub the thighs all over with half of the glaze and let them rest at room temperature while the oven heats, about 10 minutes.
Toss the butternut squash cubes, halved Brussels sprouts, and red onion wedges with the remaining 1 tablespoon of olive oil and a generous pinch of salt and pepper. Spread everything across the prepared pan in a true single layer.
Nestle the glazed chicken thighs skin side up among the vegetables, leaving a little breathing room around each piece. Pour any glaze left in the bowl over the chicken.
Roast for 20 minutes, until the skin starts to turn golden at the edges and the vegetables begin to soften.
Pull the pan from the oven and brush the chicken with the remaining glaze. Flip the vegetables with a spatula so a fresh side meets the hot pan.
Return the pan to the oven and roast 15 to 20 minutes more, until the chicken skin is deeply golden and crisp and the thickest thigh reads 165°F on an instant-read thermometer.
Scatter the dried cranberries and toasted pecans evenly over the pan and slide it back into the oven for 3 minutes.
Rest the whole pan for 5 minutes. Shower with flaky sea salt, garnish with fresh thyme sprigs, add lemon wedges, and serve directly from the pan while everything is hot.
Notes
Pat the chicken thighs very dry and let them rest uncovered for 10 minutes so the skin crisps and the glaze clings. Give everything a true single layer with breathing room — a crowded pan steams instead of roasts. Glaze in two passes and trust the thermometer (165°F) over the clock.
