Buttery shortbread bars topped with a glossy honey caramel and toasted pecans, finished with flaky sea salt. All the flavor of pecan pie, no corn syrup, no pie crust to roll, and easy to cut and share with a crowd.

  • Total Time: 1 hour 15 minutes
  • Yield: 16 bars 1x

Ingredients

Scale
  • 2 1/2 cups (315 g) all-purpose flour, spooned and leveled
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (55 g) packed light brown sugar
  • 1/2 teaspoon fine salt
  • 1 cup (226 g) unsalted butter, cold, cut into small cubes
  • 3/4 cup (170 g) unsalted butter
  • 1 1/4 cups (265 g) packed light brown sugar
  • 1/2 cup (170 g) honey
  • 1/3 cup (80 ml) heavy cream
  • 1 teaspoon pure vanilla extract
  • 3/4 teaspoon fine salt
  • 3 1/2 cups (385 g) pecans, toasted and roughly chopped
  • Flaky sea salt, for finishing

Instructions

  1. Heat the oven to 350°F (175°C). Toast the pecans on a rimmed baking sheet for 8 to 10 minutes until fragrant, then cool and chop coarsely.
  2. Lightly grease a 9×13 inch pan and line it with parchment paper, leaving a 2 inch overhang on the two long sides for a lifting sling.
  3. Whisk the flour, granulated sugar, brown sugar, and salt. Cut in the cold butter until the mixture looks like coarse crumbs with pea size bits.
  4. Press the crumbs firmly into the pan with the bottom of a measuring cup, prick all over with a fork, and refrigerate 10 minutes.
  5. Pre-bake the crust 20 to 22 minutes until the edges are lightly golden. Set on a wire rack and leave the oven on.
  6. In a heavy saucepan, melt the butter, then stir in the brown sugar, honey, and fine salt. Bring to a gentle boil and boil exactly 3 minutes, stirring constantly.
  7. Remove from the heat and stir in the heavy cream, then the vanilla. Cool 5 minutes, stirring once or twice.
  8. Scatter the toasted pecans evenly over the hot crust. Pour the warm caramel over the nuts and tilt the pan to spread it to the edges. Sprinkle with flaky sea salt.
  9. Bake 25 to 30 minutes until the filling bubbles across the whole surface and turns a rich caramel color, with only the faintest wobble in the center.
  10. Cool in the pan at least 3 hours until firm. Refrigerate 1 hour, lift out with the parchment sling, and cut into 16 bars with a hot, dry knife, wiping between cuts.
