- 1 1/2 cups gingersnap cookie crumbs (about 30 cookies)
- 1/3 cup unsalted butter, melted
- 2 tablespoons packed brown sugar
- 6 ounces good quality white chocolate, chopped (not chips)
- 24 ounces cream cheese (three 8-ounce blocks), softened to room temperature
- 1/2 cup sour cream, at room temperature
- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
- 3 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1 teaspoon finely grated orange zest
- 3 cups fresh cranberries (one 12-ounce bag)
- 2/3 cup granulated sugar
- 1/4 cup fresh orange juice
- 1 teaspoon finely grated orange zest
- 1 cinnamon stick
- Sugared cranberries, for decorating (optional)
- White chocolate curls, for decorating (optional)
Instructions
- Heat the oven to 325F (165C). Stir the gingersnap crumbs, melted butter, and brown sugar until evenly moistened. Press firmly into the bottom of a 9-inch springform pan, coming slightly up the sides. Bake 10 minutes until fragrant and set, then cool completely.
- Reduce the oven temperature to 300F (150C). Place the chopped white chocolate in a heatproof bowl set over barely simmering water and stir until just melted and smooth. Remove from the heat and cool 5 minutes, until barely warm to the touch.
- Beat the softened cream cheese on medium speed until completely smooth and fluffy, about 2 minutes, scraping the bowl twice. Beat in the sour cream until blended.
- Whisk the sugar and cornstarch together, then beat into the cream cheese until smooth. Pour in the barely warm white chocolate and beat on low just until combined.
- Add the eggs one at a time, beating on low speed just until each disappears. Stir in the vanilla and orange zest. Do not overbeat.
- Pour the batter over the cooled crust and smooth the top. Tap the pan firmly on the counter twice to release large air bubbles.
- Bake 55 to 65 minutes, until the edges are set and lightly golden but the center still jiggles slightly when nudged. Turn the oven off, crack the door open, and cool the cheesecake inside for 1 hour.
- Cool to room temperature on a wire rack, about 1 hour more. Run a thin knife around the edge, cover, and refrigerate at least 6 hours or overnight.
- Make the topping: combine the cranberries, sugar, orange juice, zest, and cinnamon stick in a saucepan. Bring to a boil over medium heat, then simmer 10 to 12 minutes, stirring occasionally, until the berries burst and the juices thicken to a syrup. Discard the cinnamon stick, cool completely, then chill.
- Spoon the cold compote over the chilled cheesecake just before serving. Decorate with sugared cranberries and white chocolate curls if you like. Slice with a hot dry knife, wiping the blade clean between cuts.
