  • Total Time: 2 hours 37 minutes
  • Yield: 12 rolls 1x

Ingredients

Scale
  • 1 cup (240 ml) whole milk, warmed to 110°F (43°C)
  • 2 1/4 teaspoons instant yeast (1 standard packet)
  • 1/4 cup (85 g) honey, divided (1 teaspoon for proofing, the rest for the dough)
  • 1 large egg, at room temperature
  • 1/4 cup (56 g) unsalted butter, melted and slightly cooled
  • 3 1/2 cups (440 g) all-purpose flour, spooned and leveled
  • 1 teaspoon fine sea salt
  • 1/4 cup (56 g) unsalted butter, very soft (for the topping)
  • 2 tablespoons honey (for the topping)
  • 1/2 teaspoon flaky sea salt, for finishing

Instructions

  1. Whisk the warm milk, yeast, and 1 teaspoon honey; rest 5 to 10 minutes until foamy.
  2. Whisk in the egg, remaining honey, and melted butter until smooth.
  3. Add the flour and salt; stir until a shaggy dough forms.
  4. Knead 8 minutes until smooth, elastic, and slightly tacky (windowpane test).
  5. Cover and rise 60 to 75 minutes in a warm spot until doubled.
  6. Divide into 12 equal pieces and roll into tight, smooth balls.
  7. Arrange seam side down in a greased 9 by 13 inch pan; proof 40 to 45 minutes until puffy. Preheat oven to 375°F (190°C).
  8. Bake 20 to 22 minutes until deep golden; tent with foil if browning too fast. Center roll should read 190°F (88°C).
  9. Brush hot rolls generously with the soft butter and honey glaze; sprinkle with flaky sea salt.
  10. Cool 5 minutes in the pan, then serve warm.
